Pizza has become a classic favorite takeout option—but sometimes, you just want a cozy night in and a homemade meal. This vegan pizza recipe proves that going the plant-based route doesn’t mean sacrificing flavor or satisfaction. It uses a simple strategy: load up on veggies and rely on nutrient-dense, whole grain crust to deliver craveable texture and taste. Follow these steps to make a healthy, hearty homemade vegan pizza in under an hour.

Prep the Pizza Crust
You can find ready-made whole wheat vegan pizza crusts in the market, or go from scratch. This dough only requires five basic ingredients: whole wheat flour, yeast, nondairy milk, olive oil, and salt. It will come together quickly in your food processor or stand mixer. Quinoa salad has become one of my favorite meals! Quinoa adds color, texture, and nutrients to what would normally be a basic salad! This ancient grain also gives summery salads a nice fall flare! Add in some baked sweet potatoes, cranberries, and walnuts for a crisp and delicious fall lunch!

A Closer Look…

Red Quinoa

Quinoa

In my opinion, quinoa is one of the most beautiful foods when it is prepared. It is fluffy, colorful, and just emanates healthy vibes! Quinoa is a complete protein (has all amino acids), is high in fiber, and contains many vitamins and minerals! We love quinoa! I would recommend using the tricolor quinoa (Amazon, or Walmart) or the red quinoa to add some color to your salads!

White Sweet Potato

I really enjoy white sweet potatoes compared to the traditional orange sweet potato. They have a more mild flavor but still have a fall flare. For this recipe, I toss the potatoes in olive oil, cinnamon, and salt and then throw them in the oven! The process is easy and the result is delicious! Sweet potatoes contain many vitamins like vitamin C and B vitamins!

Toppings

My favorite toppings for this quinoa salad are dried cranberries and sliced almonds. However, you can also use walnuts, other dried fruits, seeds, and more! There is a lot of creative freedom here so don’t be afraid to use it to create your ideal fall quinoa salad!

  • The Potatoes
  • 1 large white sweet potato (cubed)
  • 1 tablespoon olive oil
  • 1 tablespoon cinnamon powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • The Salad
  • 2 servings quinoa (cooked)
  • 2 cups romaine lettuce (chopped)
  • 2 cup spinach (chopped)
  • Dried cranberries, sliced almonds, walnuts, etc.
  • The Dressing
  • 1 tablespoon balsamic vinegar
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon ground ginger
  • 1/2 teaspoon topping salt
  • 1/4 teaspoon pepper

Preheat the oven to 450 degrees Fahrenheit and line a baking sheet with foil.

Wash and cube the potatoes and then lay out on a clean dish towel to dry.

Place the potatoes in a large tossing bowl and add in the olive oil, cinnamon, salt, and pepper.

Toss until all the potatoes are evenly coated (use your hands a little)

Spread out evenly on the lined baking sheet.

Bake for 40 minutes or until tender, flipping half way through.

In the meantime, cook the quinoa according to the directions on the package.

Wash and chop the lettuce and spinach, and then place them in a medium serving bowl.

Once the potatoes and quinoa are cooked, allow them to cool down slightly before adding them to the salad.

BlendJet 2 Smoothie

I love a refreshing vegan smoothie for breakfast or for a snack! I have never been a huge fan of green smoothies or vegetable smoothies. However, I really enjoy a classic fruity smoothie to quench my thirst or wake me up in the mornings! This recipe is one of my favorite flavor combinations: Pineapple, Blueberry, Dragonfruit, and almond milk. I always add some chia for omega-3’s as well! You can add some nut butter or vanilla protein powder for more protein but I like this one as is :).

A Closer Look…

A Beautiful Dragon Fruit: E-Mart, Daegu

I have fallen in love with the BlendJet2 blender during my time in South Korea. It is super powerful, is easy to use, and is very easy to clean (compared to a food processor or different blender). It blends through ice, almonds, frozen fruit, and more! Which is great for people that would want to add some nuts to a smoothie! It has been great for travel since it is small in size and has dual voltage charging. To use it, you just throw everything in starting with the liquids and ending with the ice, press blend, and then devour! The BlendJet is easy to clean because it cleans itself! Just add a little soap and water, press blend, and then rinse a couple times with water! That’s it! I love it.

As for the vegan smoothie itself, it is composed of some of my favorite fruity flavors! Various fruits are not as easy to come by and may not be as cheap in South Korea as they are in the US but I have still enjoyed some great flavor combos! Pineapple seems to be everywhere and it is great for your digestive track so I have been using that a lot. You can also find blueberries and strawberries most places so I usually rotate those two fruits each week to have some variety. The main point is you really still have all you need plus some to make delicious smoothies in Korea even though the variety isn’t as large as in the US.

  • Enough dairy-free milk to cover the blade of your blender (about 1/2 cup for a BlendJet)
  • 1/2 cup chopped fresh pineapple
  • 1/3 cup fresh blueberries
  • 1 tablespoon chia seeds
  • 1/4 cup frozen dragonfruit cubes (I cut and freeze the night before)
  • About 3 small icecubes

Chewy and Fudgy Texture

These vegan protein brownies are super delicious and very healthy! They have a chewy and fudgy texture and a rich and well balanced flavor. They are great to snack on throughout the day, use as a healthy dessert, or even enjoy for breakfast! This recipe is also gluten free so it is very allergy friendly! Let’s take a closer look at these awesome brownies!

A Closer Look…

The ingredients for this recipe are simple and can be easily modified to your cupboard, taste, or preference. They store great in the fridge too so you can make a batch and use them as a healthy and protein packed snack through the week!

The Ingredients

Flour

I used a mix of gluten free flours for this recipe so that it was not crumbly and still plenty chewy and dense! I used homemade oat flour and Bob’s Red Mill 1-1 GF flour mix. You can also try all-purpose flour or any other gluten free mix that you want to try or have laying around. Let me know what you try and how it works out for you!

Protein

So what makes these brownies “protein brownies”? You get some protein from the oat flour but I also added a scoop of Sunwarrior’s Warrior Blend Chocolate protein powder! You can use whatever chocolate protein powder that you are familiar with or enjoy. I do recommend this powder. It is great to use in protein shakes but also doesn’t disturb the flavor in baked goods! I also used almond butter for this recipe. You can use peanut butter, cashew, or sunflower butter as well:).

Date Frosting

Date frosting has become one of my new favorite things! It is a wonderful, tasty, and healthy way to frost your baked goods! All you need is some cocoa powder and fresh dates! Grind it all up in a food processor and then easily spread it on cakes, brownies, cookies, and more!

Other

I added natural applesauce to this recipe to help it stay moist and rich! I used refined coconut oil which helps produce a chewy brownie texture rather than a cakey texture. You can also try canola oil! You can use melted vegan butter as well but sometimes this can make your brownies more cakey. So it depends on what you like:).

Add some chocolate chips or coconut flakes into the mix for some texture and flavor variety! These vegan protein brownies are just so great and healthy! Give them a go and let me know what you think in the comments below!

  • Brownies
  • 1/2 cup finely ground oat flour
  • 1/2 cup gluten free flour (I used Bob’s Red Mill 1 to 1)

  • 1/2 cup dark chocolate chips
  • Date Frosting
  • 1 cup fresh dates (softened)
  • 2 tablespoons cocoa powder
  • 2-4 tablespoons warm water

Preheat oven to 350 degrees Fahrenheit. Line a 8×8 baking dish with parchment paper.

Add all dry ingredients to a food processor. Process together until combined.

In a separate bowl combine all wet ingredients.

Add the mixed wet ingredients to the dry ingredients in the food processor.

Process until smooth and creamy.

Stir in the chocolate chips. Pour the batter into the prepped baking pan.

Bake for 30 minutes, or until an inserted toothpick comes out mostly clean.

Allow to cool before icing.

Cover and soak the dates in hot water for about 15 minutes.

Add the softened dates to a food processor with ~2 tablespoons of the warm water.

This vegan chili is absolutely delicious! In fact, my mouth is watering while I sit here and write about it :). This recipe is perfect for a chilly fall or winter day or when you feel a sniffle coming on! It is packed with nutritious vegetables, protein rich beans and tofu, and flavorful spices. The Ingredients…

What starts off every great recipe? Some fresh, crisp, nutrient-packed veggies that pack a punch in the flavor department! There are so many great ingredients in this recipe that are so great for you! Which is why I highly recommend indulging in a bowl (or two) of this vegan chili when you’re not feeling the best. So let’s take a look…

Garlic and Onion

In case you haven’t noticed, I try to use garlic and onion in almost every recipe I create because of their natural antibiotic properties! Eating some garlic and onion each day is a great way to ward off those unwanted microorganisms. These ingredients also contain vitamins B, C, iron, and more!

Cilantro

Small but mighty, cilantro adds a warm yet citrusy flavor and is packed with vitamins and minerals! You can find vitamins A, K, potassium, iron, and magnesium in this amazing herb! It is also known to help cleanse the body of heavy metals that build up over time.

Tofu and Beans

The protein power houses of this dish that still offer a variety of health benefits! Tofu contains all 9 essential amino acids, iron, calcium, and more! In this recipe the tofu is baked and marinated so it adds such a rich texture to this amazing vegan chili! Also contributing to the nutrient density of this dish, beans are also high in fiber which is a great cleansing nutrient (if you know what I mean :)).

  • The Tofu
  • 1 package (16 oz) Extra-Firm Tofu
  • 1 teaspoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground red pepper (optional)
  • 1 tablespoon soy sauce
  • 2 tablespoons water
  • 1 tablespoon maple syrup or agave
  • The Chili
  • 1 yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 box low-sodium vegetable broth
  • 1 can (28 oz) diced tomatoes (low-sodium if possible)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • 2 cups white mushrooms (sliced)
  • 2 medium tomatoes (chopped)
  • 1 hot pepper of choice (diced, optional)
  • 3 stalks green onion (chopped)
  • 1 cup cilantro (chopped)
  • 1 can (15 oz) kidney beans (drained and rinsed) *
  • 1 can (15 oz) white beans (drained and rinsed)

First you will want to press the tofu.

To do this, you can place the tofu between two plates with a folded paper towel in between the top/bottom of the tofu and each plate. Place something heavy (like a large cookbook) on top of the top plate.

Allow it to be pressed for 10 minutes and then switch out the paper towels.

Allow to press for at least 10 more minutes.

Once finished, crumble the tofu with your hands into a medium sized container or large zip-lock bag.

Mix all seasonings in a small bowl and then pour over the tofu.

Make sure all the tofu is covered in the mixture and allow to marinate for at least 20 minutes in the fridge (Turning half way).

In the meantime, line a baking sheet with foil, preheat the oven to 350 degrees Fahrenheit, and begin to cook the rest of the chili.

When the tofu is done marinating, pour it all out onto the prepared baking sheet and spread out evenly.

Bake for 30 minutes or until the pieces start to turn golden brown (flip half way with a spoon or spatula).

*I recommend preparing all of your ingredients as stated above before starting the chili as this is much easier*

Saute the yellow onion and garlic in olive oil in a large soup pot over medium heat until fragrant.

Add the vegetable broth, diced tomatoes, and seasonings. Stir to incorporate.

Add in all the vegetables, excluding the beans and chickpeas.

Cover and cook on medium heat for 10-15 minutes.

Add the beans and chickpeas and cook for an additional 10 minutes over medium heat. *

Finally, add in the baked tofu crumbles and cook on low for an additional 10-20 minutes.

Serve immediately or store in the fridge for 5-6 days.

*You can use whatever combination of beans/chickpeas that you want! Just make sure it is around the same amount.
