This is the ultimate vegan skillet cookie! A chewy, sweet classic dessert baked in a skillet! Created special using Supernatural Rainbow Chips! A Closer Look…

So what ingredients made this cookie so ravishingly delicious? Well, they are simple, accessible, and pretty healthy in terms of dessert!

The Dough

I am a huge fan of using various and healthier flours but sometimes white flour is just the best. I used unbleached white flour for this recipe to get the texture I was going for! You can also try gluten free all purpose, let me know how it turns out in the comments below!

The Sugar

I used a combination of brown sugar and coconut sugar. Both are a little healthier than white sugar. You can also buy organic:). This cookie is not too sweet, I would say it is pretty much perfect!

The Chocolate

As mentioned above I used Supernatural’s Rainbow Chips. They are white chocolate and taste amazing! Like all of their products, these chips are colored using natural plant material rather than harmful chemicals. I highly recommend!

The Ice Cream

You can use any ice cream flavor of choice but vanilla was pretty tasty! Allow it to sit on the warm cookie for a few minutes before enjoying to get a nice melty effect.

  • 1/2 cup vegan butter (softened)
  • 1/2 cup coconut sugar
  • 1/2 cup brown sugar
  • 1/3 cup dairy free milk
  • 1 teaspoon vanilla
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Dash of salt
  • A generous amount of chocolate chips (see link above for rainbow chips I used!)

Preheat the oven to 350 degrees Fahrenheit.

Use a hand mixer to cream the butter and sugar.

Add the milk and vanilla and beat again until combined.

Add in the flour, baking powder and soda, and salt. Stir with a wooden spoon until just combined.

Fold in the chocolate chips.

Pour the batter into a greased oven safe skillet.

Bake for about 25 minutes or until the cookie is just browning around the edges.

Serve, top with more chocolate or ice cream!
