Vibrant Vegan Quiche

Vibrant Vegan Quiche – has everything you need all wrapped up into one delicious and wholesome dish! This dish may seem a little high maintenance for the avid traveller, BUT it is well worth the extra hassle when you’ve been on the road for a while and need something wholesome. It is warm, creamy, nourishing, and crispy all at once! You have your protein, veggies, and decent carbs all in one meal! So let’s take a closer look.

A Closer Look…

So what exactly makes up this ravishing dish? Welp, since it is quiche you can get relatively creative based on what veggies are available in your location.

Here’s what I used!

Ingredients

Veggies

I used a pretty standard combination of baby tomatoes, spinach, green onion, garlic, yellow onion, and mushroom. You can add zucchini and things like this as well. It is important to saute everything half way before you bake your vegan quiche so that all the veggies are nice and soft. I also recommend using fresh ingredients rather than frozen for this recipe.

Tofu

I used firm tofu, but you could also use soft or silken. The point is to be able to blend it all up without any lumps! After adding in a tad bit of milk mine was nice and creamy.

Seasonings

I used a mixture of salt, pepper, nutritional yeast, turmeric for color, dried basil, and dried parsley. Fresh herbs would be delightful too I am sure.

Crust

I went the extra mile here and made my own crust. For two reasons. One, I don’t like all the weird ingredients in store bought crust. And two, I could make it whole wheat! This crust was sooo nice. Crispy on the edge but still somehow soft and tender on the bottom. I really liked it. Find the homemade crust recipe below.

For the Traveller…

This recipe is great when you are house sitting since you will most likely have access to an oven and a pie dish. This quiche lasted me and my partner 3 days for lunch which helps us save money and stay healthy! This is perfect for fall traveling when you need something warm and cozy to enjoy.
